So, how do you choose the right natural flavor for beverages?

A natural flavor is a composition of flavoring components derived exclusively from natural sources: fruit concentrates, aromatic plants, spices, extracts, isolates or distillates. Its role is to reinforce, complement or correct the taste of a beverage while ensuring batch-to-batch consistency, despite variations in raw materials or processing conditions. Flavor strongly influences first purchase intent, and taste remains the most critical factor for long-term consumer loyalty.

From a technical perspective, the choice of flavor format is decisive. It impacts solubility, stability and the sensory result in your beverage. Main available formats

Liquid flavors in alcoholic carrier

Alcohol-based flavors generally offer excellent solubility and a very clean aromatic profile. They are particularly well suited for premium beverages, flavored sodas, cocktails and spirits. When there are no 0.0% or halal constraints, this is often the simplest and most efficient format. Some of these flavors are also available in organic versions.

Liquid flavors in propylene glycol (PG)

When alcohol is not permitted, propylene glycol-based flavors are an excellent alternative. They are stable in sweet or acidic matrices and are well suited for soft drinks, functional or vitamin-enriched beverages. They offer strong aromatic performance while meeting regulatory and marketing requirements. Please note: this carrier does not allow subsequent organic certification.

Powder flavors

Powder flavors allow easy and accurate dosing. They are particularly recommended for instant beverages, reconstitution powders, or certain liquid dietary supplements after dilution. At Arômes & Saveurs, we produce them without harmful additives and without nanoparticles.

Pure essential oils

Essential oils deliver very powerful profiles, but in their raw form they are not suitable for direct beverage flavoring. Without proper dispersion, they often cause a ringing effect (oily ring at the surface) and poor homogeneity. We therefore recommend formulated flavors derived from essential oils, where the oily fraction has been removed to ensure beverage compatibility. This is the case with our soluble extracts, whose process is validated by Ecocert.

Good to know: for beverages, direct use of essential oils should be avoided. Formulated liquid or powder flavors are safer and more stable.

Natural flavor “X”, natural flavor of “X”, and extract of “X”: what’s the difference?

Under European regulations, a flavor can be called natural only if all its flavoring components originate from natural raw materials. These components fall into two broad categories: natural flavoring preparations (e.g., essential oils, alcoholates, infusions) and natural flavoring substances (isolated compounds naturally present in plants, such as vanillin or menthol).

An extract of “X” is the most straightforward category: it is obtained exclusively from “X” (100% natural flavoring preparation from “X”), with no additions of other sources or isolated substances.

A natural flavor of “X” must contain at least 95% of its flavoring fraction derived from “X”. The remaining portion (up to 5%) may come from other natural sources, but it must only support or refine the profile (e.g., greener or fresher notes) and cannot recreate the main taste of “X”.

A natural flavor “X” is a natural formulation without a legal minimum content of “X”. It may contain very little—or even none—of “X”, which can be relevant when the raw material is scarce or expensive. This category also enables profiles that do not exist as a natural “extract of X” (e.g., cola or grenadine), giving greater creative freedom.

In practice, the main differences for beverage manufacturers relate to labeling and, in some cases, organic compatibility. Extracts and natural flavors of “X” generally offer more specific labeling options, while “natural flavor” is broader. For organic products, European rules typically require that the flavoring used is compatible with organic requirements—often favoring the “natural flavor of X” category depending on the application.

Additional selection criteria for beverage professionals

For R&D teams, Quality departments or buyers, choosing a flavor goes beyond price per liter. The most relevant metric is cost-in-use: the actual flavoring cost per liter of beverage. A more expensive but highly concentrated flavor can be significantly more economical in use than a low-end solution.

Stability is also critical. The flavor must maintain its intensity despite pasteurization, acidic pH, carbonation and, where applicable, alcoholic fermentation, which can transform or consume certain compounds.

Solubility must be validated under real conditions: alcohol content, sweeteners, carbonation, dry matter, etc. Some profiles also require flavor masking to reduce undesirable notes (bitterness, metallic notes, vegetal notes or active-related off-notes).

Finally, regulatory compliance and labeling must be controlled. Claims such as “natural flavor of X”, “natural flavor” or “X-flavored beverage” follow strict rules under European Regulation (EC) No. 1334/2008. At Arômes & Saveurs, we only supply natural flavors. In flavored beers and other brewed beverages, interactions between microorganisms and flavors are a key factor. Some highly volatile top notes may be partly consumed or transformed during fermentation or heating. To ensure a stable profile, we often recommend adding flavors after fermentation, just before bottling. A natural flavor can therefore be applied to only part of a batch. Example: brew a classic wheat beer, bottle half as-is, then add our soluble citrus extracts to the remaining volume still in the tank.

We offer sugar-free carrier flavors, with no refermentation risk, as a complement or alternative to fruit purées, macerations or plant additions. The goal is to ensure consistent taste from one brew to the next while keeping costs under control.
